Ginger Bison Lettuce Wraps

Looking to try a healthy alternative to beef, give Bison a shot and add some great nutrient dense ingredients like Ginger!  The below recipe is easy to prep and easy to make.

Bison is a federally protected animal so you know that it will not have hormones and they live in a free environment.  Their meat is high in protein and has a lower amount of saturated fat than normal cow beef.  The meat is high in selenium which helps fight free radical cells, high in iron which helps spread oxygen throughout the body, and high in niacin which helps break our food down into energy!Bison Wraps

Throw in a side of sauteed Kale and this dish will make for the perfect lunch or dinner!

Know The Goal

Ginger Bison Lettuce Wraps

1 pound ground bison (or substitute grass-fed ground beef)
1 onion chopped
2 cups finely chopped kale, cabbage or Brussels spouts
4 cloves of garlic minced
2 Tbsp chopped fresh cilantro (optional)
1 Tbsp chopped fresh ginger
2 Tbsp organic raw coconut aminos
2 Tbsp organic unfiltered apple cider vinegar

Serve on romaine or bib lettuce leaves

Sautéed Kale with Red Peppers
1 small bag or chopped head of Tuscan or lacinato kale
1 whole red pepper sliced or diced
1 half onion slices or diced
1 tablespoon coconut oil
1 teaspoon fresh ginger
1/2 teaspoon crushed red pepper
Sea salt to taste

Sauté kale, onions and peppers in coconut oil. Add fresh ginger crushed red pepper and salt to taste
