Turkey Bacon Egg Muffins

Breakfast is the most important meal of the day because it is going to boost your metabolism early and give you the energy you need to get your day off to its best start. This recipe can be made same morning as eaten, but is also great to meal prep ahead of time so they are ready to go with no prep time in the mornings. Turkey Bacon Egg Muffins

8 whole eggs
8 egg whites
6 slices nitrate-free organic turkey bacon
1 cup diced tomatoes
1/2 cup wilted chopped spinach
1/4 cup diced onion (optional)
1 tbsp coconut oil
salt and pepper to taste

• Preheat over to 350 degrees
• If not using bleach-free parchment mu n
cup liners then grease the inside
• Cook bacon on stove top and cut in half
• Place 1/2 piece of bacon around edges of
each mu n cup
• Fill each mu n cup evenly with egg mixture
and chopped veggies
• Cook for 20 minutes or until cooked through
the center
